Excellent translation. I'd only translate the last sentence closer to the Arabic as such, "Verily, God loves the trusting [in Him]."

{3:160} If God should aid you, no one can overcome you; but if He should forsake you, who is there that can aid you after Him? And upon God let the believers rely.

Instead of "aid", I'd use "help." "Aid" translates أيد better. As you may have noticed, it is the origin of it!

{3:160} If God helps you, then there is no defeating you; but if He should forsake you, then who is that who [can] help you after Him? And upon God let rely the believers.

Not sure about "trusting." The Arabic word has a stronger "rely" or "depend" flavor than a "trust" flavor in my understanding.

I concur. Let me suggest this:

I suggest,
{3:159} So by whatever mercy from God, you [, O Muhammad,] have softened toward them. And if you had been gruff, thick-hearted, they would have disbanded from around you. So pardon them, ask forgiveness for them and consult them in the matter. Then when you have decided, then rely on God. Verily, God loves the relying [on Him].
