{36:37} And a sign for them is the night. We remove from it [the light of] day, so they are [left] in darkness.

I suggest,
{36:37} And a sign for them is the night: We strip from it the day and suddenly they are in darkness.

Quote:
{36:40} It is not allowable for the sun to reach the moon, nor does the night overtake the day, but each, in an orbit, is swimming.

I suggest,
{36:40} Neither the sun is to catch the moon, nor is the night outracing the day; each in an orbit is swimming.

With the exception of "strip" which is an excellent choice, I am not too happy about the word choices here in comparison to the original translation.

Excellent!

Not sure which you don't like: that I left out the interjections or the use of the adverb "suddenly." I used the adverb to convey the "sudden when" (إذا المفاجئة). I left out the interjections because I felt they were obvious and therefore unneeded.

{36:39} And the moon - We have determined for it phases, until it returns [appearing] like the old date stalk.

Phases of the moon are also called "houses" in English. It must be the influence of Muslim astronomers since that's the word used in this verse. I therefore suggest,
{36:39} And the moon - We have determined it seven houses (phases), until it becomes like the old date stalk.
