{12:47} [Joseph] said, "You will plant for seven years consecutively; and what you harvest leave in its spikes, except a little from which you will eat.

I suggest,
{12:47} [Joseph] said, "You plant for seven years diligently; and what you harvested, leave in its spikes, except a little from which you eat.

Excellent. I like "diligently" a lot.

{12:48} Then will come after that seven difficult [years] which will consume what you saved for them, except a little from which you will store.

{12:49} Then will come after that a year in which the people will be given rain and in which they will press [olives and grapes]."

I suggest

{12:48} Then come after that seven hard [years] that eat up what you have prepared for them, except a little of what you guard.

{12:49} Then comes after that a year in which the people will be given rain and in which they will press [olives and grapes]."

I left "press" and the interjection in until I research the word. I have a feeling it is not a correct translation.

I like your translations more :)
