That should be "what her color is," to be grammatically correct.

I'd translate the last sentence, "and they almost did not."

How about "and they weren't about to do it."

I suggest,

{2:67} And [recall] when Moses said to his people, "Verily, God commands you to slaughter a cow." They said, "Do you take us in ridicule?" He said, "I seek refuge in God from being among the ignorant."

{2:68} They said, "Call for us to your Lord to clarify to us what it is." [Moses] said, "He verily says that it is a cow which is neither aging nor a heifer, median between that, so do what you are commanded."

{2:69} They said, "Call for us to your Lord to clarify to us what her color is." He said, "He verily says that it is a yellow cow, bright in color - pleasing to onlookers."

{2:70} They said, "Call for us to your Lord to clarify to us what it is. Verily, the cows have become similar for us. And verily we, if God has willed, surely are finding the way".

{2:71} He said, "He verily says that it is a cow neither subject to agitate the earth nor to irrigate the crop, intact, no flaw in it." They said, "Now you have come with the truth." Then they slaughtered her, and they almost did not.
