I'd say "a clear sign" instead of "a sign of evidence." بينة is simply an adjective of آية here.

I'd remove the interjection, "for disbelief" because it's interpretive. The verse condemns any alteration of the favors of God.

I suggest,
{2:211} Ask the Children of Israel how many a clear sign We have given them. And whoever replaces the favor of God after it has come to him - then verily, God is severe in punishment.

{2:212} Beautified for those who disbelieve is the life of this world, and they ridicule those who believe. But those who fear God are above them on the Day of Resurrection. And God gives provision to whom He wills without account.

I suggest,
{2:212} Embellished for those who have disbelieved is [this] the nearest life, and they ridicule those who have believed. But those who have watched out [for God] are above them on the Day of Resurrection. And God provides whom He wills without account.

I believe they parsed it wrong. They are translating آية of بينة, but the "tanween" on آية precludes that parsing (assuming that the small "meem" next to the "kasra" constitute "tanween"?).

It does, and it signifies that the "n" sound of tanween should be changed to an "m" sound to make it easier to pronounce in conjunction with the following letter, "b."
