Very good translation. I'd only remove "for" from "provided for you" because it is correct English to say "provided you" and that makes it closer to the Arabic. Also, the interjection of "indeed" is unnecessary. So, I suggest:

{2:172} O you who have believed, eat from the good things which We have provided you and give thanks to God if it is Him you have been worshiping.

{2:173} He has only forbidden to you dead animals, blood, the flesh of swine, and that which has been dedicated to other than God. But whoever is forced [by necessity], neither desiring [it] nor transgressing [its limit], there is no sin upon him. Indeed, God is Forgiving and Merciful.

Would "meat" be more accurate translation than "flesh?"

I suggest,
{2:173} Verily, He has only forbidden to you the dead, blood, the meat of the swine, and what has been dedicated to other than God. But whoever is forced, neither desiring [it] nor transgressing, then there is no sin upon him. Verily, God is Much Forgiving, Merciful.

I looked into it and there is no clear answer in my mind. Flesh doesn't seem to cover internal organs, which are covered by the prohibition.
